Red Lentil Pasta Salad

Red lentil pasta is a delicious way of obtaining protein. Combined with the fresh spinach, onion and tomatoes you get a refreshing lunch.

Ingredients :

- 1 cup cooked red lentil pasta

- 1 cup spinach

- 1/4 of a red onion, sliced

- a bunch of sliced cherry tomatoes

- 1tbs olive oil

- salt and pepper to taste


Instruction :

Mix all ingredients in a bowl and refrigerate for about 20 minutes. Serve cold and enjoy!


You can also add curcuma for extra flavor!
