Mozzarella or Ricotta Sage Ghee Raviolis
Ingredients:
Pasta:
- 3 cups semola flour
- 6 eggs
- 1 tsp salt
- 2 tbs olive oil
Ricotta filling :
- 1 1/2 cup ricotta
- 1/4 cup grated parmesan
Mozarella filling:
- 1 mozzarella, cut in cubes
Sage Ghee:
-1/2 cup Ghee
- 1/2 tsp salt
- 10 chopped sage leaves
Instructions :
In a solid surface place flour and form a hole in the middle, add eggs, salt and olive oil in the middle and mix. With your hands incorporate the dough. Cover the dough with plastic and let rest for 20 minutes.
Then add flour into the solid surface and start rolling dough into a thin layer. Then add the cheese filling and cover with the thin dough. Cut into ravioli shapes. In a pot boil water with salt. When the water is boiling add raviolis and cook for about 7 to 9 minutes. While the raviolis are cooking in a separate pan add 1/2 cup of ghee, 1/2 tsp of salt and 10 chopped sage leaves. When the ghee is fully melted throw in raviolis. When the raviolis are fully covered in ghee serve and enjoy!
